Quinoa pomegranate pistachio salad

Since we’re still participating in #gezondinapril, I thought I’d share another recipe this Monday. Definetely try out my quinoa salad with pomegranate, roasted almonds and pistachios, coriander and some spring onions. Healthy and lip smacking good. It’s also great with feta cheese. I love to cook nutritious, seasonal and delicious meals, so this salad surely comes up in my mind. Did you know that pomegranate seeds are the third highest fruit source of antioxidants, including vitamin C? Pistachios contain fewer calories and more vitamin K than other nuts.

This helps you maintain or lose body weight and support heart health. Quinoa gives you a full feeling with plenty of energy. This is a great party or special occasion dish, but I also love to make it as dinner after a long day at work.

Ingredients

  • 1 part of quinoa
  • 2 parts of water
  • Pomegranate seeds of 2 pomegranates
  • 1 package of feta cheese
  • Chopped fresh coriander
  • 1 spring onion, chopped
  • Almonds to taste
  • Pistachios to taste
  • 5 tbsp olive oil
  • 1 lemon
  • sea salt
  • olive oil

Method

  1. Drain the soaked quinoa and boil it with two parts of water. When all the water has boiled away, let it cool.
  2. Chop coriander and mix with pomegranate seeds and the spring onion.
  3. Saute almonds and pistachios in a little olive oil.
  4. Mix all the ingredients and add lemon, feta, olive oil, salt and pepper.
  5. I love to make a dressing of Greek yoghurt, 1 clove of garlic, lemon zest & salt and pepper with it.
